Birthday Treats ❤️

Celebrating my birthday today – IN QUARANTINE, of course 😂 – with these yummy muffins and a super delicious veggie burger – or actually a vegetarian version of a sloppy joe, with grilled halloumi, avocado and pickled onions, and some creme fraiche spread. This is actually a very great combination, and perfect for a birthday! 😋

I’m sharing the recipe for the vegan cocoa muffins. It makes 12 muffins 😉

Ingredients:

  • 3 dl wheat flour
  • 2 1/4 dl cane sugar
  • 1 ½ dl cocoa powder
  • 2 tea spoons baking powder
  • 2 table spoons rapeseed oil
  • 3 dl vegan cocoa milk

Instructions:

Heat the oven to 200 degrees celcius,

In a large bowl, mix all the dry ingredients very well. Use a strainer to finely sift the ingredients.

Now add the remaining ingredients, and mix it well with a hand mixer.

Fill 12 muffin cases 2/3 full, and bake them for 25 minutes.

The icing used here:

  • 4 dl powdered sugar
  • 2 dl cocoa powder
  • 120 g vegan butter

Mix the ingredients 🙂
