Vegan Quinoa Bowl

I make this quinoa bowl often, it is easy, healthy, PCOS-friendly and antiinflammatoric. And of course vegan too 🙂

Quinoa is low in calories, but high in proteins. Moreover it contains all 9 essential amino acids. By eating it every day, it is said to reduce the risk of cancer, heart disease and diabetes. As it has a low glycemic index, it is therefore very much PCOS-friendly, and of course also good for controlling the sugar level in blood. It can also help in losing weight.

Patlican Güvec – Turkish Aubergine Meal

While trying experimenting with food, I came across veg style güvec for some years ago, that is a Turkish dish, I got served in a Turkish restaurant. I loved the dish so much, that I wanted to try it by myself. Eggplant/aubergine is actually something I hated for ages, I guess I started loving to eat this vegetable for about 4-5 years ago. Tamils normally make curry out of it, and this kind of dish can unfortunately be very oily too. One Pot Tomato and Chickpeas Deliciousness

This delicious one pot dish has loads of protein and some yummy veggies. You might know, that I really love aubergines and tomatoes too, so I decided to make a mix with these. It is actually something I tried at a cafe long ago, and I liked it so much. So I decided to make something like that – on my own, and you now what? The dish came out very well! 😉

I actually madk a large amount of it, so that I also can have it some for my colleague W and I, for the lunch at work too 🙂

Overnight Chia-Oats Pudding

Experimenting with food is something I love to do. You get so many different tastes and very lovely dishes out of this way of cooking. Honestly, cooking was definitely not my cup of tea until I turned 22-23 years old. Really don’t know why, but I thought it was difficult and very boring to live alone, and be cooking only for myself. But later, I changed a lot, and cooking became a kind of hobby to me. Many people ask me, if I have any difficulties in being a vegetarian, as they think it’s limited how delicious food vegetarians can make. But they’re wrong! There are many ways of getting nutritious, and at the same time lovely food being a vegetarian (or vegan). Experimenting with the flavours is the way 😉
