Vegan Quinoa Bowl

I make this quinoa bowl often, it is easy, healthy, PCOS-friendly and antiinflammatoric. And of course vegan too ๐Ÿ™‚

Quinoa is low in calories, but high in proteins. Moreover it contains all 9 essential amino acids. By eating it every day, it is said to reduce the risk of cancer, heart disease and diabetes. As it has a low glycemic index, it is therefore very much PCOS-friendly, and of course also good for controlling the sugar level in blood. It can also help in losing weight.

Thirunelveli Inspired Sodhi – But skinny! ;)

Sodhi is usually eaten with idiyappam (string hoppers) in Ilangai, and I’m actually not sure about what Indians eat with sodhi, but I saw a recipe on Thirunelveli style sodhi in a cooking show with Venkatesh Bath for many years ago, and I think it’s really good with idiyappam.

Thirunelveli is a town in Tamil Nadu, and is very famous for many food items, especially the halwa, from the shop Iruttu Kadai. Other popular food items in Thirunelveli is uluthansoru and uluthankali, and of course sodhi that are particularly eaten in Thirunelveli. Veggie Bhajjies

Bhajji is a very popular type of fritter in many states in India, especially Tamil Nadu, Kerala, Andhra Pradesh, Karnataka, Maharashtra, Gujarat, Odisha, Assam and West Bengal. In south it’s commonly known as “bhajji”, whereas it is known as “bhajiya” in the other states.

Nowadays you can eat bhajjies all over the country, and also in other places like Sri Lanka and Malaysia.
